A hearty, rustic casserole made with our very own Yellow Hammer cider, Cumberland sausages, and smoky bacon. Slowly braised to create a rich, delicious sauce, this dish is the ultimate comfort food for crisp, spring nights. Pair it with a glass of chilled Yellow Hammer cider for the perfect meal.
Ingredients (Serves 4):
- 8 Cumberland sausages
- 200g smoked bacon, chopped into small pieces
- 2 onions, peeled and sliced into wedges
- 3 garlic cloves, peeled and chopped
- 2 parsnips, peeled and chopped into chunks
- 3 sticks celery, chopped into chunks
- 3 tbsp plain flour
- 3 tbsp tomato purée
- 3 tbsp fresh sage, finely chopped (or 2 tsp dried)
- 500ml Yellow Hammer cider
- 150ml chicken stock
- 2 eating apples, peeled, cored, and sliced into wedges
- 1 tbsp olive oil
- Salt & freshly ground black pepper
Method:
1. Preheat the Oven:
Preheat to 180°C (160°C fan). Heat the oil in a large, lidded, ovenproof pan over medium heat.
2. Brown the Sausages & Bacon:
Fry sausages until golden brown all over (about 10 minutes). Remove and set aside. Add bacon pieces and cook until lightly browned (2-3 minutes).
3. Sauté the Vegetables:
Add the onions, garlic, parsnips, and celery, cooking for 5 minutes until slightly softened.
4. Build the Sauce:
Stir in the flour to coat everything evenly. Add the tomato purée, sage, cider, chicken stock, salt, and pepper. Stir well to combine. Nestle the sausages back into the pan.
5. Bake:
Cover with a lid and transfer to the oven. Bake for 40 minutes.
6. Add the Apples:
Stir in the apple slices and return to the oven for 5 more minutes.
7. Serve & Enjoy:
Spoon into bowls and serve hot with creamy mashed potatoes and steamed greens.
